Low Carb Lemon Coconut Cheesecake Bites

On the Keto diet, it is a rare treat to be able to indulge in sweets. We tried this recipe and we are in love with this rich lemony sweetness. Think “lemon coconut cheesecake bites!” These sweet and fresh bites have just the right balance of tart and richness. Just 1 or 2 of these morsels was enough to satisfy our sweet cravings! No baking is required and with only a few ingredients, they are quick and easy!

Ingredients:

2 oz cream cheese

1 tsp light sour cream

2 tsp fresh squeezed lemon juice

1/2 cup and 2 tbsp almond flour

1/2 of a lemon zested

2 tsp Truvia Natural Sweetener, 400 Packets (Net.Wt 42.3 oz)

2 tsp Splenda

1/4 tsp vanilla extract

1 - 2 pinch of salt

Topping:

1/4 cup flaked unsweetened coconut

1 tsp Truvia Natural Sweetener, 400 Packets (Net.Wt 42.3 oz)


Directions:

Step 1 - Mix all of the ingredients (excluding the topping ingredients) together in a bowl until a thick dough forms. Place bowl in freezer for approx 10 mins.

Step 2 - Mix together the toppings in a bowl and set aside.

Step 3 - Remove dough from freezer after 10 mins and roll dough in to small bite sized balls.

Step 4 - Roll the balls around in the topping pressing lightly to make sure that topping sticks on to balls and covers them entirely.

Step 5 - Freeze the balls for about an hour and then move them to refrigerator.

Step 6 - Keep them covered and stored in a container until they are ready to eaten.

Makes about 10-12 small bite sized balls. Serve and enjoy!
