Do you have some leftover carnitas sitting in the fridge that you didn't get around to cooking on Cinco de Mayo? Our recipe for carnintas will satisfy all of your keto carnivore desires. Carnitas are a tasty Mexican specialty, consisting of shredded pork cooked with herbs and spices. Our recipe includes a bit of orange zest to enhance the delicate flavors of the carnitas. We hope you'll enjoy this irresistible dish of shredded, succulent pork.


You're not dreaming!  This southwestern meal will be a favorite for the whole family. With virtually zero carbs per serving, you'll stay in Keto and feel quite satiated. 


Roasted in a Dutch Oven for 4 hours, the meat will be tender and juicy!  The meat will literally fall off the bone! We used a Lodge Enameled Cast Iron Dutch Oven to cook, but any Dutch Oven cooker should work. 


After you let the pork rest for a half an hour, you can shred the meat. A little trick that we've seen some street vendors use is to shred the meat with the use of a hand mixer. We used a Proctor 5-Speed hand mixer, but you can also use forks to shred the meat. Once the meat is shredded, you will fry the meat in a pan to give it a nice crunchy texture.



4-5 lb. pork shoulder

2 tsp sea salt or kosher salt

1 tsp fresh ground black pepper

1 tsp ground cumin

1/2 tsp paprika

1/4 cup chopped cilantro

zest of 2 oranges


Step 1 - Rinse pork with cold water and pat dry with paper towels.  Preheat oven to 285 degrees Fahrenheit.

Step 2 - Season pork with all of the spices, herbs, and orange zest.

Step 3 - Place pork in Dutch Oven and cover with lid. Place the Dutch Oven in the preheated oven in the center of the rack.  Roast in the oven for 4 hours or until pork is very tender.

Step 4 - Remove the Dutch Oven from oven using oven mitts and place it on top of the stove to rest uncovered for 30 minutes.

Step 5 - Shred the carnitas into small strands and chunks of meat. Transfer the shredded pork to a large roasting pan. Fry the meat over medium heat on your stove until the meat reaches your desired level of crispiness.  Enjoy!
